Food and Wine Pairings: Breton oysters. Gougères during an aperitif served chilled. Raw or cooked fish, grilled or in sauce. Fine charcuterie. Dishes in mustard sauce. Fresh and matured cheeses.

Ground: Kimmeridgian. Rich in limestone
Winemaking: Alcoholic fermentation at controlled temperature for 15 days then malolactic in stainless steel vats.
Breeding: 8 months in stainless steel vats and 10 at 20% in 500L demi-muids

Service: Ideal between 12 and 13°C
